Nourished Bakery

Our Gluten Free Bakery Story

Back when Kristina and Ryan first started dating, they quickly realized that both of them had a dream of owning a small bakery someday. Not long afterwards, Kristina developed an intolerance to gluten. She found her options increasing limited in the restaurants that they frequented together. She also struggled with the reality that she could not eat the communion bread at church she worked at.

The two of them began to dream about what it would look like to make all the items in their little dream bakery gluten free. After they moved up to Cedar Rapids from Texas they decided to simply try a simple experiment. “Let’s try and sell some of our baked goods at a small farmers market once a month and see what happens.” By the end of the season, they were selling out every single time. People who were gluten free and were not gluten free started showing to the market just for the little pop up bakery!

Kristina and Ryan welcomed their first child ( Audrey ) in August 2022, so Kristina decided to apply for a small grant to hire a second baker to head up our operation and the application was accepted! Kristina immediately reached out to Betsy, another new mom, to see if she would come on board part-time so the two of them could tackle the baking together. Betsy agreed and now they tag team making our amazing, gluten free baked goods together!

Meet Betsy Our Lead Baker

“I love how food brings people together. Some of my favorite memories have been made around a family table, under a picnic tree, at a coffee shop, or bakery. Food provides us the time and space to nourish ourselves and relationships with whom we share it with. I am grateful for the opportunity to be a part of the Nourished team in providing gluten free baked goods to our community. I am personally not affected by gluten intolerances, but believe everyone should have access to food they love and enjoy. Baking has been part of my life since my first East Bake Oven at the age of six years old, and I am eager to get to share what Nourished has to offer.”
